About the Role

Marriott Hotels Resorts in Dubai is seeking a highly skilled and creative Pastry Chef with a passion for culinary excellence. As a key member of our esteemed culinary team, you will be responsible for crafting exceptional breads, pastries, and desserts that delight our guests. Duties and Responsibilities

  • Prepare a diverse range of breads and pastries, including meticulous dough preparation, proofing, baking, and artistic decoration.
  • Consult daily production sheets to accurately execute the required variety of baked goods.
  • Cook and prepare food items adhering strictly to established recipes, quality benchmarks, and presentation standards.
  • Maintain comprehensive kitchen logs to ensure strict compliance with food safety programs and regulations.
  • Proactively inform the Head Chef about excess food inventory to facilitate strategic planning for daily specials.
  • Utilize baking and measuring tools, equipment, and appliances safely and appropriately for all pastry preparations.
  • Follow and enforce all food safety and handling policies, including rigorous personal hygiene procedures.
  • Regularly check and verify correct temperatures of kitchen appliances and food items, promptly reporting any discrepancies to management.
  • Monitor the overall quality of food prepared and the consistency of portion sizes served throughout each shift.

Qualifications and Requirements

  • Proven experience as a Pastry Chef or in a similar senior baking role.
  • In-depth knowledge of baking techniques, dough lamination, and sugar work.
  • Proficiency in food safety and sanitation standards.
  • Ability to manage inventory and control food costs effectively.
  • Strong leadership and team management skills.
